Ingredients
- Bananas 2 ripe
- Oatmeal 1.5 cups
- Eggs 1 egg
- White Rice 1/4 cup
Method
- Preheat oven to 180C.
- Mash bananas thoroughly in a bowl until no lumps remain.
- Beat egg and mix into mashed banana.
- Combine oatmeal and rice flour in another bowl.
- Mix wet and dry ingredients until just combined.
- Drop small spoonfuls onto parchment-lined baking tray.
- Bake for 15 minutes until edges are lightly golden.
- Cool on tray for 5 minutes, then transfer to wire rack.
