Beef and Vegetable Stew

A hearty, slow-cooked stew packed with iron-rich beef and nutrient-dense vegetables. Ideal for cold weather.

Method

  1. Cut beef into small, even cubes and place in large pot.
  2. Add water just to cover beef and bring to gentle simmer.
  3. Peel and chop all vegetables into small pieces.
  4. Add vegetables to beef after 15 minutes of simmering.
  5. Add brown rice and stir well.
  6. Simmer uncovered for 30 minutes until all ingredients are very soft.
  7. Cool completely before serving. Skim any fat from surface if desired.
