Ingredients
- Beef 280g lean
- Carrots 3 medium
- Pumpkin 1 cup
- Green Beans 1 cup
- Brown Rice 4 tablespoons
Method
- Cut beef into small, even cubes and place in large pot.
- Add water just to cover beef and bring to gentle simmer.
- Peel and chop all vegetables into small pieces.
- Add vegetables to beef after 15 minutes of simmering.
- Add brown rice and stir well.
- Simmer uncovered for 30 minutes until all ingredients are very soft.
- Cool completely before serving. Skim any fat from surface if desired.
