Ingredients
- Blueberries 1 cup
- Coconut 2/3 cup
- Oatmeal 1 cup
- Eggs 1 egg
Method
- Preheat oven to 175C.
- Lightly mash blueberries to release some juice, keeping some whole.
- Beat egg in a bowl and mix in mashed blueberries.
- Combine oatmeal and shredded coconut in a separate bowl.
- Mix wet and dry ingredients gently until just combined.
- Drop spoonfuls onto parchment-lined baking tray, spacing well.
- Bake for 18 minutes until firm and lightly golden.
- Cool completely on wire rack before serving.
