Blueberry and Coconut Biscuits

Antioxidant-rich blueberries with tropical coconut make nutritious, crunchy biscuits. Great for brain health.

Ingredients

Method

  1. Preheat oven to 175C.
  2. Lightly mash blueberries to release some juice, keeping some whole.
  3. Beat egg in a bowl and mix in mashed blueberries.
  4. Combine oatmeal and shredded coconut in a separate bowl.
  5. Mix wet and dry ingredients gently until just combined.
  6. Drop spoonfuls onto parchment-lined baking tray, spacing well.
  7. Bake for 18 minutes until firm and lightly golden.
  8. Cool completely on wire rack before serving.
