Cod and Sweet Potato Fishcakes

Mild fishcakes gentle on sensitive stomachs. Cod is low in fat and easy to digest, with sweet potato for energy.

Ingredients

  • 🐟 Cod 200g cooked, flaked
  • 🍠 Sweet Potato 250g cooked and mashed
  • 🫛 Peas 60g, cooked
  • 🌿 Thyme small pinch dried thyme

Method

  1. Preheat oven to 190C.
  2. Cook and mash sweet potato (plain, no butter or salt).
  3. Flake cooked cod.
  4. Mix cod, mashed sweet potato, peas, and parsley together.
  5. Form into small fishcakes.
  6. Bake on a lined tray for 20-25 minutes until golden.
  7. Cool before serving.
