Ingredients
- Cod 200g cooked, flaked
- Sweet Potato 250g cooked and mashed
- Peas 60g, cooked
- Thyme small pinch dried thyme
Method
- Preheat oven to 190C.
- Cook and mash sweet potato (plain, no butter or salt).
- Flake cooked cod.
- Mix cod, mashed sweet potato, peas, and parsley together.
- Form into small fishcakes.
- Bake on a lined tray for 20-25 minutes until golden.
- Cool before serving.
