Ingredients
- Sweet Potato 1.5 cups
- Oatmeal 1 cup
- Eggs 1 egg
Method
- Preheat oven to 180C.
- Bake sweet potatoes until very soft, cool slightly and mash thoroughly.
- Beat egg and mix into sweet potato puree.
- Add oatmeal to a separate bowl.
- Mix wet and dry ingredients until just combined.
- Form into 20 small balls and place on parchment-lined tray.
- Flatten slightly with fork.
- Bake for 20 minutes until firm.
- Cool completely before storing.
