Watermelon and Coconut Frozen Treats

Hydrating watermelon with tropical coconut makes ultra-cooling summer treats. Over 90 percent water content.

Ingredients

Method

  1. Remove all seeds from watermelon and dice into small pieces.
  2. Blend watermelon pieces until smooth using food processor or blender.
  3. Strain through fine sieve to remove excess pulp, keeping juice.
  4. Stir in yogurt and fold in shredded coconut.
  5. Divide among 8 popsicle molds or small freezer cups.
  6. Insert popsicle sticks if using molds.
  7. Freeze for at least 6 hours until solid.
