Ingredients
- Watermelon 2 cups seedless
- Coconut 1/3 cup
- Greek Yogurt 1/4 cup
Method
- Remove all seeds from watermelon and dice into small pieces.
- Blend watermelon pieces until smooth using food processor or blender.
- Strain through fine sieve to remove excess pulp, keeping juice.
- Stir in yogurt and fold in shredded coconut.
- Divide among 8 popsicle molds or small freezer cups.
- Insert popsicle sticks if using molds.
- Freeze for at least 6 hours until solid.
